This Côte de Léchet evolves beautifully in the glass; it possesses a charming personality. The nose is floral, delicately lemony. Its impulsive temperament is not inappropriate, especially as it quickly regains composure.

Characteristics

Grape variety: 100% Chardonnay.

Soil type: Kimmeridgian, limestone rich in fossils, bringing finesse and minerality to Chablis wines.

Vine age: 35 years.

Vinification: Natural alcoholic and malolactic fermentations with 100% indigenous yeasts in tanks.

Alcohol: 12.5%.

Tasting: The wine has a pale gold robe with slight greenish reflections, appearing brilliant, bright, and clear. On the palate, silky aromas of ripe apple, pear, and yellow plums stand out. It combines delicate layers of fruit flavors with mineral notes, leading to a very good length on the finish.

Food Pairing: Pairs wonderfully with grilled andouillette, cep mushroom risotto, and crayfish gratin.

Serving temperature: 10-11°C.
